Recipes for the Family

The children keep asking for special recipes that they loved so here's the first one.  I may do this on a separate page or maybe just in the blog.  Haven't quite decided how to set this up.

Cherry Surprise Cake (especially for Ted)

1 cup Wesson Oil
1 Cup Sugar
4 eggs
1 tsp. vanilla
2 cups flour
1 tsp baking powder
1 can cherry pie filling

Beat oil and sugar until light and fluffy.  Add eggs, one at a time, beating after each. Beat well.  Add vanilla.  Sift flour and baking powder together (I don't think I sift but I do mix it together.  Add to egg mixture.  Grease 13 x 9 x 2 pan.  Pour one-half of the batter in pan.  Sprinkle with 1/2 of mixture of 1/2 cup sugar and 1 tsp. cinnamon.  Spoon can of cherry pie filling over the batter (I lay the cherries on and then pour the rest.) Top with remaining batter (I spoon it on slooooowwwwwllly).  Sprinkle with remaining sugar-cinnamon mixture.  Bake at 325 for 50 minutes.

"Oh Boy" Waffles (especially for Amy)

2 1/4 cups all-purpose flour
4 tsp baking powder

Sift together and add

3/4 tsp salt (I leave this out, and pretty much leave out salt in all recipes--or maybe put a dash)
1 1/2 Tblsp. sugar

Mix
2 beaten eggs
2 1/4 cups milk
1/2 cup salad oil (I leave this out and add a bit more milk)

Add all at once to the flour mixture, beating until moistened.

Bake in preheated wafflemaker.   The recipe says it makes 10-12 which it probably does if it's a small wafflemaker but ours is one of those big ones that make four small waffles at a time.   We get 16 small waffles.  Most of us eat four of them so if there's a crowd double the recipe.  Or whatever it takes...
